Ingredients

  • 150g VRAB

  • 1L vegetable stock

  • 200g Konjac noodles chopped

  • 200g Enoki Mushrooms

  • 100g sliced wood ear mushroom

  • 150g firm tofu

  • 3 tsp vinegar

  • 2.5 tbsp soy sauce

  • 1 tbsp sugar

  • Salt and pepper

  • Cornstarch slurry (5tbsp cornstarch + 3 tbsp water)

Directions

  • Soak wood ear mushroom overnight in water
  • Bring vegetable stock to boil. Add vinegar, soy sauce, sugar and salt.
  • Add VRAB, chopped konjac noodles, mushroom, wood ear mushroom. Stir well.
  • After soup comes to a boil, add corn starch slurry and stir till thicken.
  • Turn off heat and ready to serve
