VRAB Shark Fin Soup
1L vegetable stock
200g Konjac noodles chopped
200g Enoki Mushrooms
100g sliced wood ear mushroom
150g firm tofu
3 tsp vinegar
2.5 tbsp soy sauce
1 tbsp sugar
Salt and pepper
Cornstarch slurry (5tbsp cornstarch + 3 tbsp water)
- Soak wood ear mushroom overnight in water
- Bring vegetable stock to boil. Add vinegar, soy sauce, sugar and salt.
- Add VRAB, chopped konjac noodles, mushroom, wood ear mushroom. Stir well.
- After soup comes to a boil, add corn starch slurry and stir till thicken.
- Turn off heat and ready to serve
